Chia Seed Pudding is your answer, because not only will it fill your belly and give you tons of energy, but you can prepare it the day before. Simple. For people who tend to feel rushed in the morning, this recipe will be a lifesaver.
My husband embarked on the Keto diet last year, which is an extremely low carb and high-fat diet. The idea is your body will use it’s own body fat reserve as a fuel source once it’s in the metabolic state of ketosis, where your body is effectively processing ketones. I’m not promoting this diet because it’s not for everyone. In fact, it’s not recommended for people with cardiac or thyroid issues and these individuals should consult a physician first if they’re even considering such an extreme diet. However, I mention this diet because it was an emphasis in our home.
My husband’s intention was to lose weight, which he did. 35 lbs. to be precise! Whoa! Go, babe! I lost 22 lbs. and what I noticed immediately was improved sleep quality, increased mojo and overall energy, and a sharpened focus. No morning brain fog! This diet is recommended for people who want to lose weight. There happens to be several wonderful side effects with this diet. As my friend and nutritional therapist, Kelsey Ale recommends, Keto-Paleo cycling may be more sustainable for the general population. So, as in Yoga, you need to observe your body’s changing needs. Don’t be too fixed. Be adaptable and flexible.
When I began this diet, no tortillas for my tacos, rice with my Thai curry, and bread for my sandwiches was making me feel twitchy! We bought a fabulous cookbook called the Ketogenic Diet Cookbook, which reinstated a fun approach to food with a healthy curiosity. I started experimenting with my breakfast options and BOOM this chia seed pudding recipe was created.
The beauty of this recipe is that you put it together in less than 5 minutes the night before and you can make enough for the week! Pair it with warm tea or something satisfying and you’ll be skipping to work feeling amazing! Yes, it happens to be recommended for the keto diet, but anyone can enjoy it. My seven year old daughter loves this recipe! In fact, she likes making it for us.
1/2 C Almond Milk
1/2 C canned Coconut Milk
3 T Chia Seeds
1/8 t Vanilla Extract
3-5 dashes of cinnamon
Mix all the ingredients together in a sealable jar and store in the refrigerator overnight to thicken. Enjoy this simple Omega-3 and protein-rich breakfast treat!
You may substitute your favorite yogurt for the almond and coconut milk.
An additional option is to add fresh berries to your chia seed pudding. YUM!
